Falafel Friday
Ingredients
Falafel (homemade or use a store-bought mix)
Tahini sauce (homemade or use store-bought)
2 tomatoes (diced)
1 cucumber (diced)
1 onion sliced (red or white)
1/4 cup fresh parsley (finely chopped)
Optional: 1/4 cup sandwich pickles
1/4 cup of Organic Greek Olive oil
Steps to Make
1-Gather the ingredients
2-.Wash and dice the tomatoes, cucumber, onion, and parsley according to the recipe and set aside
3-.Prepare the falafel recipe from scratch or use a box of falafel mix.Heat a large frying pan or griddle to medium high heat
4-. Spray with cooking oil or coat with about 1 tablespoon of Organic Greek olive oil.
5- Heat the pita rounds for 2 minutes on each side. The pita may begin to brown a little
6-.Stuff each pita round with the falafel, diced tomatoes, diced cucumber, sliced onion, and chopped parsley. Drizzle with the tahini sauce.
7-Serve and enjoy!
